Hello all. I'm up to 22 crunches, and it's more painful each time. I'm probably doing something wrong, but really, how tough can crunches be? I walked/ran for 30 minutes last night, and truly thought I was going to faint, too (Jen and I need to stay away from subway stations, I guess).
Made a truly outstanding meal last night, and so I'm sharing it with all of you:
-sear scallops for about 4 minutes, turning once, in 2 T olive oil as well as a good coating of cooking spray. Remove from pan and keep warm -add sliced garlic to the pan (with a bit more spray and/or oil) and brown
-Add to the same pan, two or three large diced tomatoes (or a whole bunch of grape tomatoes) and saute for several minutes, until you have a nice sauce.
-Stir in any other veggie you want (we added blanched green beans and mushrooms).
-Return the scallops to the pan, continue heating for a few minutes and then serve.
This is a beautiful dish, which is important when you're watching what you eat, and really filling. We added couscous to the meal, ate smaller portions than we would have a week ago, but I don't think either of us felt deprived. Enjoy!
