Week 2 challenge: Fruits and veggies. The loser who eats the greatest number of fruits and veggies servings Mon-Sunday will win the week 2 challenge. Make sure to jot down the number as you go--no "estimating" at the end of the week allowed. How do you count a serving, you ask?
-One medium-sized fruit
-1/2 cup raw, cooked, frozen or canned fruits and vegetables
-3/4 cup 100% fruit or vegetable juice
-1/2 cup cooked, canned or frozen legumes (beans or peas)
-1 cup raw, leafy vegetables
-1/4 cup dried fruit
