Hey Folks,
Sorry I didn't blog last week just back at school after being gone for 5 weeks kept me busy. The food thing went well as I went into the week having made Turkey Chili and a Lentil Soup. Having an apple and peanut butter on my desk saved my butt (literally).
I currently have more veggies in my frig than Whole Foods has on their shelves. Yesterday Jen, Stephen, Karen and her husband Herb, joined us for the Seahawks game and it is possible to watch a game without a beer or glass of wine in your hand. I marinated and grilled extra large prawns with traditionally coctail sauce, lots of veggies with a 3 layer hummus(cilantro, jalepeno, and spicy) that I got at Trader Joe's. I sliced some crusty whole grain bread and served it with herb and garlic cream cheese and chunks of smoked salmon. Karen brought some great strawberries and vodka and cranberry juice, Thanks! We all had an exciting time listening to John express himself. The food was enjoyed and I don't think anyone felt deprived, at least I didn't.
I learned last week that walking is very hard on the back (damn)and I was doing way too much. The suggestion for me is to get on a stationary bike for short periods of time as often as possible. So now I am in the market for a good bike any suggestions????
Good luck to everyone this week, John and I will be enjoying Taco Salads tomo9rrow that will qualify for 5 servings of veggies! Bring on the fruit and veggies. Drinking 8 glass of H2O will be my goal this week and this is always a struggle when I begin...hello bathroom.
